3 Cups Chicken Breasts or Tenders, baked then shredded
22 oz Cottage Cheese
1 Cup Celery, chopped
1 Cup Grapes, halved
1/2 Cup Pecans, chopped
3/4 Cup Dried Cranberries
1/4 Cup Milk
4-5 Tbsp Fresh Basil, Chopped
1 tsp Lemon Juice
1. Bake and then shred chicken breasts or tenderloins – be careful not to bake them for too long or they’ll get dry.
2. Puree cottage cheese – you can do this by putting it in a blender/food processor/Nutri Ninja or you can put it in a bowl and use an immersion blender.
3. Add all of the rest of the ingredients to the cottage cheese, mix thoroughly and ENJOY! 🙂
